Sunday food: Rosewater & pistachio cake

This cake has been in gradual evolution in my kitchen for years. It’s based on those middle eastern cakes that are drenched with sticky-sweet sugar syrup right after baking, while everything is still warm.  I serve it with rosewater & yoghurt crΓ¨me, which contrasts the sweetness nicely & smells almost as good as it tastes!  Ingredients: 150g unsalted pistachios, shelled & ground to a soft green powder  100g ground almonds 1 tbsp rosewater 200g…

Sunday food: Cinnamon buns

I’m calling these a Sunday food, but we eat them most days at the moment. Orla’s started waking at 6am, & these cinnamon rolls are just the right combo of sugar & carbs to tempt me out of bed & down to the coffee machine. As always, I obsessed until I had the recipe perfected. I use my bread machine for all of the hard work, which makes them surprisingly quick, mess-free and easy. Dangerously…

Perfect Almond Biscotti

After much trial & error & a bit of invention, I think I’ve perfected it. My recipe is based on this one here, but with a few important changes. Ingredients: 10 tbsp salted butter, melted 1 cup caster sugar 1/2 cup dark brown sugar 1 tbsp good quality vanilla essence or almond extract 3 eggs, lightly whisked – I use Matilda’s, which are very large; use the biggest you can find 3.5 cups plain…

biscotti besotted

I have become a bit besotted with biscotti of late. In the hospital, on Boxing Day (a long story), I bought a crappy Americano & dunked a cellophane-wrapped biscotti, & it tasted like the best thing I’d ever eaten. Now I’m obsessed, trying to recreate it. How much almond to include? Vanilla or orange peel? I’m an expert now & the kitchen is continually littered with the various stages of my latest batch.  R takes…
