These summery little flatbreads use pretty standard pantry ingredients & take less than an hour from start to finish – perfect for picnic lunches or emergency carb-fixes. I love them with fresh tomato soup for a quick & simple weekday dinner, or with a heaped garden salad and big chunks of feta in the sun.

Hehe! Now I am home and away from the peaceful mecca of the birthing centre where people bring you lovely food, baking seems a bit less realistic right now. I just need to work out how to get everyone to tidy up after themselves and then I might have time! They still look yummy though so I have incentive. (Oh but I’ve also missed being trapped under a sleeping baby ❤️) xx
